The story: The MAFIC vineyard is exclusively planted to the varieties of Piedemonte - Nebbiolo, Dolcetto and Pinot Gris. It is a fantastic site for these varieties and adds weight to the argument that the Macedon region needs to be officially divided into sub regions. The Pinot Gris from this sites retains excellent acidity and the grape skins build excellent tannin. It is those characters that gave this grape the potential for this wine style.

The essence: This wine is about time. Nearly a month on skins, locked up in a stainless steel tank before being pressed hard to extract further tannins. The wine then spends a year in barrel prior to an additional year in tank. The two years of aging is required to polymerise the tannins and release the floral notes that make this style famous. Acacia flowers, minerality and tannin.
